Had the chance to chat up Gab and ask her some pretty awesome questions.
Hungry Ilonggo: What made you consider this food concept?
Gabby: Growing up, I read Robert Kiyosaki’s Rich Dad Poor Dad. This inspired me to do something on my own. I was pretty sure that I didn’t want to work for someone else and letting them earn more from my skills. For a time I was asking myself what I could do and what I was good at. Eventually I taught myself how to bake. I grew up in a home where we had a lot of guests over frequently and so it was imperative that we had good food being served.
But to be honest, I laugh when I remember a time when I was younger, I stared at an oven and I said, I would never understand baking. That’s all different now.
I love baking because of accuracy. With cooking, you can be experimental, but baking has certain specific requirements that make it more science than art. But of course, art will always come into play in aesthetics.
Hungry Ilonggo: How many failed attempts have you experienced getting great results?
Gabby: Depending on the recipe sometimes a lot sometimes a few. Once you’ve done your fair share of time in the kitchen, you’ll know how certain portions of your recipes are already. Then it’s merely a matter of finding the right fusions.
Hungry Ilonggo: Why Gourmet Confections?
Gabby: From a marketing perspective, there’s not a lot of local businesses currently in the gourmet confections category. So there’s a lot of opportunity to make a good brand there. Not only that, I enjoy making sweet combinations and just not be limited by mainstream flavors.
Hungry Ilonggo: What’s your best seller? What makes it different?
Gabby: The Blueberry Cheesecake is something both foodies and non foodies can be comfortable with. It’s a dessert that can be for all kinds of occasions. What’s different? The crust doesn’t crumble easily, it’s not just a layer but it’s part of the over-all flavor.
Hungry Ilonggo: What would you recommend for people who want to try your sweets for the first time?
G: For the adventurous:
This is the cutest and most underrated dish, soft and supple. It’s a fusion of sweetness and bitterness, and comes with an option of adding caramel sauce.
Cheesy! Smells like pizza, but it’s not a pizza. Goes well with sausages and meats.
A good combination of the sourness of lemon, a peppery flavor and the right amount of spicy chocolate.
G: For more conservative foodies:
Creamy with pineapple pulp.
Chocolate cupcakes with fancy toppings!
Like Reese’s but bigger! Melts in your mouth goodness.
